The best of Franche Comté in a distinctive wooden box, the Mont d’Or is a pale, creamy cheese with a meltingly soft texture beneath a golden rind and delicate flavours with pine notes.
Produced in the co-operative farms on Mont d’Or, it is made from unpasteurised milk collected exclusively from Montbéliarde and Pie Rouge cattle. The cheese is encircled in spruce bark, which imparts a resinous flavour, and then crimped into a box, where it forms its wrinkly rind. It can only be made seasonally, between 15th August and 15th March, when cows come down the mountain and their milk becomes fattier, which makes this delicious cheese even more special.
Mont d’Or can be spread onto a croissant or spooned on top of potatoes. Alternatively, remove the plastic wrapper, wrap the wooden container with foil but leaving the top exposed, and bake in the oven for 15-20 minutes until the center is gloriously gooey. Remove the top rind after baking and before consuming, revealing the beautiful, soft paste underneath. Savour with a crusty freshly baked baguette. Either way, it will taste like heaven!
