Isomalt powder 100%, derived from sucrose. It can be substituted for sucrose in a 1:1 ratio without changing the physical characteristics of the final product. It provides half the calories of sucrose. Stable at high temperatures without browning (150ºC). Perfect for making candies and pastry preparations.
Storage Conditions: Recommended keep at 15-25 C, in a dry place out of light, in original packaging until use and closed.
How to use: Replace 100g of liquid glucose with 75g of this powdered version
Application: Sorbet, ganache, mousse, pastries, icing & candies etc.
Remarks: Suitable for vegetarians, vegans and coeliacs. Halal and Kosher.
Elaborations: The ideal substitution for classic sugar when making ice creams, spun sugar, crystallized sugar balls, vegan desserts and more.
