Brie de Meaux is “The king of cheeses”, what more can I say! After a few weeks of maturing, Brie de Meaux will be covered with a downy white rind, even pigmented with red and brown spots. Its straw-yellow paste is soft and should not flow. On the palate, it concentrates aromas of hazelnut.
