Bergamot is a sour citrus fruit, the fruit of the bergamot tree, a hybrid between the green lemon tree and the bitter orange tree. A small tree three to four meters high, the bergamot tree appreciates the warm Mediterranean climate and its fresh and tangy notes evoke the terroir of the Riviera. The best bergamot essence is extracted in Southern Italy, where 95% of the world’s production is naturally found.
