Arborio rice is one of the best-known Italian rices in the world. Selected in the field by the farmer Domenico Marchetti in 1946, it owes its name to the town of the same name in the province of Vercelli.
The Arborio rice grain is the largest in the Italian rice panorama, which is why it is appreciated for al dente risottos, while the central pearl favors the absorption of seasonings and flavour. Unlike Carnaroli, it has a low concentration of amylose, so it releases a greater quantity of starch during cooking, facilitating creaminess during creaming.
