Maison Ponthier has chosen to combine two varieties of raspberries in order to obtain a taste that is both intense and perfectly balanced. The Willamette variety brings a pronounced and tangy aroma as well as a high BRIX while the Mecker variety brings roundness and depth. The latter, more fragile, is very sensitive to climate changes (temperature, precipitation). Thus, the producer partner with whom Maison Ponthier works has developed a high-altitude culture between 300 and 1000 meters located exclusively on hillsides. In order to eliminate any bitter note, the achenes are removed during the transformation process of the puree, which will only contain the flesh of the fruit.
