For the production of its purée, Maison Ponthier has selected the prestigious Alphonso mango from Ratnagiri. Mangoes from this region have a reputation for being among the best in the world and the Alphonso variety is the most prized among dozens of other varieties. The coastal region of Ratnagiri guarantees excellent fruit quality thanks to a high humidity level and soil that is both acidic and very rocky. In Maison Ponthier’s partner plantations, the trees are abundantly irrigated as soon as the fruit reaches the size of a grape with nearly 50 liters of water per day and per tree. Strict control of the Brix level of the mangoes allows a harvest at full maturity. Small in size, very concentrated in sugar and pigments, they are at the same time perfectly fragrant, fleshy and non-fibrous.
