Terre Exotique’s Espelette chilli pepper PDO is an extra special chilli powder from the Basque mountains, with aromatic, slightly spicy notes. The chilli pepper takes its name from the French village of Espelette, and it’s PDO (Protected Designation of Origin) status means the pepper has to be produced in a certain area and follow certain specifications – currently only 10 farmers hold the secret to how it’s produced!
The pepper is harvested between the end of August and October. The red fruits are oven-dried before being hung outside local houses to dry out further. The final stage of production involves the peppers being ground to a powder.
With aromas of tomato and hay, this spicy, fruity pepper is key in Southwestern French cooking – it’s added to anything from omelettes to salads.
