Vialone Nano rice represents an exception in the panorama of traditional risotto rice, because it has a “medium” grain, smaller in size than the classic Carnaroli, Arborio, Roma, Baldo and S. Andrea. Its excellent cooking resistance is given by the high percentage of amylose and is perfect for al dente risottos. One of the most historic rices in the Italian rice production scene, it was born in 1937 and, thanks to its ability to absorb and grow during cooking, it is still one of the most popular grains for traditional risottos today. Due to its similarity to the Spanish Bomba rice, with a medium, pearly and firm grain, it is also ideal for cooking paella.
